What is Jerky ?

The word "jerky" itself comes from the Quechua term Charqui, which means "dried meat".
Jerky is meat that has been cut into strips
trimmed of fat, marinaded in a spicy, salty or sweet liquid, and then dried with low heat (usually under 70°C/160°F) or occasionally
salted and sun-dried. The result is a salty, stripped, semi-sweet snack that can be stored without refrigeration . Jerky is an
early application of food preservation techniques. Todays technique we use dehydrators so we can control the drying
process which is a lot faster and safer then sun drying the old fashion way.

We are a family owned business located in Wellington, Florida and have been making the finest Beef Jerky ,Spice Rubs and Sauces for over 25 years. Our products are made with the freshest, all natural ingredients and are the perfect balance between sweet and heat. The best you have ever tasted. I have had a love for all things BBQ since I was at a very young age around 7 years old 1968. It all started when my parents took me to a place called "Talbots" on Paulina in Chicago. I still remember there BBQ ribs and chicken on a tall rotissere in the front window. When you walked in the smell was "HMMM" out of this world. There ribs,rubs and sauces had such a unique flavor you just could't get enough! After all the ribs were gone I remember I would take the fresh french bread and thick cut steak fries that came with the meal and finsh off the sauce with them "MMMM" That was the icing on the cake!
This is where my Taste, Passion and Inspiration for "Great BBQ" started. Since Talbots is gone the flavors I remember as a young boy lives on in all my recipes.
As I got older and started grilling and I would always think about the flavor of Talbots Ribs, there sauce and seasonings / rubs. I liked the BBQ I made but I knew I could take it to another level. That is when I discovered I could make authentic BBQ in my own backyard! This started the next phase of my addiction. I wanted to make the best BBQ ever. In my attempts to do this I was not satisfied with the store bought rubs I was using. I decided the only way I was going to make the best BBQ was to make my own seasoning / rubs. I spent many years of trial and error making my own seasonings / rubs. Then I hit gold!
I came up with the right blend of spices to make whatever I was cooking taste great!!
I started giving out my rubs to family and friends. I then started getting asked by friends of friends if I would sell them some of my seasoning / rub. So that is when I decided to start selling my seasonings / rubs and shared my love of flavors with everyone.
Still when family and friends come over for a meal or BBQ, they would always ask if I have some extra sauce or some of my rub to take home so they could use it when cooking at home. So now I make sure I have some extra everytime I have family or friends over.
